View Full Version : Vegetarian Mexican Burger

Burger Mix
420g can red kidney beans, rinsed & drained
1 small onion, diced
2 cloves garlic
1 tablespoon chopped fresh coriander
1/2 teaspoon ground cumin
1 teaspoon chopped jalapeno chilli
1/2 cup rolled oats
1 egg
1/2 medium green capsicum, finely diced
2 tablespoons plain flour
2 tablespoons canola oil

Tomato Salsa
1 medium tomato, finely diced
1 small red onion, finely diced
1 tablespoon chopped fresh coriander
1 tablespoon chopped fresh mint
1/2 teaspoon ground cumin
1 tablespoon lemon juice

6 wholemeal mine pita breads, toasted
1 cup shredded lettuce

1 Place kidney beans, onion, garlic, coriander, cumin and chilli in a food processor and pulse until blended but still coarse.
2 Transfer to a large bowl, add oats, egg and capsicum, mix together well.
3 Divide the mixture into 6 portions, mould each portion into a patty with well floured hands.
4 Heat oil in non-stick pan and cook patties over medium heat for 4 minutes each side, or until golden brown and cooked through.
5 Mix salsa ingredients
6 Place shredded lettuce on toasted pita, place patty on lettuce and spoon salsa over top.

I like to add a little avocado and cheese for something different.

They sound great Anna. Thanks for posting. Have you tried them on the grill? I love to BBQ :D.

They sound great Anna. Thanks for posting. Have you tried them on the grill? I love to BBQ :D.
Had the boy do them on the BBQ, but I think they need a little longer to cook all the way through.

Hope you enjoy them as much as I (usually!) do. :)
