View Full Version : Roasted Green Beens & Brussel Sprouts

This in an excellent side dish...pairs well with lean beef or chicken!

Ingredients:

1 lb. fresh green beans
1 lb. fresh brussels sprouts (can even get them at your SuperWalmart)
1 bunch of green onions, washed and chopped
1 lemon, halved
1-2 tbsp. olive oil
Salt or substitute and pepper
8-10 sprigs of fresh rosemary (rosemary is a strong herb, so adjust according to your taste)

To prepare:

Wash brussels sprouts and cut each in half. Wash green beans and snap ends. Leave the the green beans whole. Place sprouts in a large pot and cover with water. Bring to a boil and boil for 3 minutes. Add green beans to pot and continue boiling vegetables for 5 minutes longer. Drain vegetables. Place in shallow roasting dish. Sprinkle vegetables with salt and pepper to taste (optional). Toss in green onion and whole sprigs of rosemary. Drizzle vegetables with olive oil. Bake at 350 degrees for approximately 20 minutes, or until vegetables are tender-crisp. Squeeze the lemon over the vegetables. I recommend removing the rosemary sprigs before serving. Enjoy!

I like the idea of using rosemary with vegetables. This recipe sounds like one that I would enjoy, but I do not take anticoagulants. For those on Coumadin/Warfarin, very little portions might be alright if balanced with other vitamin K foods. The concern that I have is that brussels sprouts (289 for 5 sprouts), green onions (207 for 2/3 cup), green beans, and olive oil are all quite high in Vitamin K.

Blanche, you're right....oops, I didn't think of the Vitamin K issue! I'm still in the waiting room...so I don't have to deal with the anticoagulants. In general, this is a heart healthy dish....but I'll be more careful next time ;)

This would work marvelously for when I have a high INR reading! It's a tasty knock down. :D

There are no forbidden foods on my table. I like brussel sprouts. When I make this recipe, Al will either pass on it or have a very small portion. The trick with Vitamin K and anticoagulation is consistency from day to day. We have veggies every day and let the Coumadin do its job. On balance, Al's INR is stable and in range. Thank heaven that poultry and fish are not high in Vitamin K. I'd have a real problem with portion control then. :)

I was hoping for a higher INR range so I could have cornbeef and cabbage for St. Patty's Day.:D :D But I have had an INR of 2.7 for several months now.:p :p :p I have a small serving of veggies for dinner everynight.:) :) I have no idea what would raise my INR..:confused: :confused: Not that I want too:p :p Bonnie

You live in a charming town. I was there two weeks before Thanksgiving on a mini vacation...lovely. Also, let me tell you, that is some hike up to Anna Ruby Falls for heart patients...that was my first really bad episode of SOB! But I enjoyed every minute of it!:)

I love my little village. Quiet now..Anna Ruby Falls is only a 10 min. drive for me..Go there and walk the dog up to Falls a lot..:) :)If you ever come back..be sure and call me. :) Bonnie
