View Full Version : Very Low Salt Eggplant "Parmesan"

Use your homemade tomato sauce to make this dish.

You'll need:

Eggplant
Flour
3 eggs
No Salt Matzo Meal
or
No Salt 4C Seasoned Bread Crumbs
Garlic Powder
Oregano
Basil
Lorraine Cheese (has 1 percent sodium per slice)
Corn Oil

Slice eggplant into 3/8 inches slices.

Set out three bowls, one with flour, one with 3 well-beaten eggs mixed with a Tab. water until perfectly smooth, one with either 4C No Salt Seasoned Bread Crumbs or No Salt Matzo Meal mixed with garlic, basil and oregano.

Dip each slice into flour, then egg wash, then into bread crumbs or Matzo Meal.

Fry slices in oil until golden brown. Drain.

Add a small amount of tomato sauce to the bottom of a large pan, add eggplant, cover each slice with some tomato sauce. I also add more garlic powder, basil and oregano, on top of tomato sauce. Put 1/4 slice of Lorraine cheese on each eggplant slice.

Bake in a 400 degree oven until cheese has melted and sauce is bubbling.

This heats up well for eggplant sandwiches the next day (using your own homemade no salt bread, of course), or with some toasted no salt bread, buttered with no salt butter, and sprinkled with garlic, basil and oregano.

You folks who are salt lovers can add your own salt, but it won't taste nearly as good :) :)

Eggplant is my favorite italian dish! Real easy on the INR too. Can have as much as you want!

Will give this a try along with a few dashes of salt to boost the old blood presure.

I am a low rider.;)

Hi Gina-

If sodium is not a problem for you, use Mozarella cheese on top. Lorraine cheese is for the low sodium folks. You can indulge.

Mozarella it is! My cardio instructed me to eat a higher sodium diet for low blood pressure.

Was not sure I heard him correctly the first time! Excuse me. Can you repeat that? ;)

Whaaat? Higher sodium for low blood pressure? Please elaborate! I have been told the opposite. What's the world comin to.

Oh, I get it now. You have to raise your blood pressure. My bro had to do the same.

Hi Henslyee,

Yep, he told me to increase my salt. Not overdo, but more is good. My blood pressure runs real low 70/? with a high of 90/? Can't recall the second number. With the salt I can get it up to 110 or so and not feel dizzy.

Ann, how are things going with your daughter? Hope all is well. Please drop me a note if you have a moment. I do worry about your both.

i've loved several of your recipes and use the pork rub regularly on chicken and even on my broiled salmon_ i love it!!!
thanks again. i'll try this one soon. we love eggplant parm, but i don't make it often because it's so rich and salty!!
