View Full Version : chicken-melon salad with yogurt vinaigrette

Just served this to the "reluctant" teens tonight, and they actually liked it.
Slice cantaloupe into thin wedges and arrange on a lettuce-lined plate. (Check your INR first :D )
Top with chicken breast slices or chunks. (Used my Foreman Grill)
Sprinkle with toasted walnut pieces and sliced red onion slivers.
Top with special dressing -- equal parts vanilla yogurt and a reduced fat Italian dressing (This is so much better than it sounds!)

Sherry - I knew there was a reason I married a southern Indiana gal - man they sure know how to cook. Your recipe sounds like a real winner and I can envision having a picnic on the banks of the Ohio and enjoying every bite ! Thanks for your contribution to the recipe secion - if we all pitch in, were gonna make this the most popular section of the site. Chris

Thanks. Maybe hope to see you at a tennis match this fall??? They start practice next week, and I'll p.m. you a schedule. (We usually play in Vincennes and Jasper at least once during the season.) Take care.

This is a real winner. Lots of protein and yummy!!! I've mixed ranch and Italian dressings, but never thought of yogurt before. I substituted chopped apple for crunch because I had no nuts in the house. This recipe lends itself to many variations, but I would never leave out the red onion. Have you thought of sprinkling in some fresh mint or cilantro?

Thanks for the suggestion, Blanche. I'm a little spice-illiterate, other than salt and pepper. Yours sounds much tastier :)
