These muffins are great for those with high cholesterol because they tend to pick up low LDL and drag it out of your body. They are not hard to make (I did it easily) and they also are good as a general diet food - if you eat one 20 minutes berfore your meal, they tend to expand and you won't be as hungry.The ingredients are as follows: 1/2 cup brown sugar, 1 1/2 cups oat bran cereal, 1 1/2 cups whole wheat flour, 1 1/2 tsp baking powder, 1 1/2 tsp baking soda, 1/2 tsp salt, 2 eggs (or substitute eggs or 4 egg whites), 1 cup applesauce-chilled, 4 tbsp vegetable oil. Optional ingredients: one or two ripe bananas for extra moisture, chopped nuts (walnuts are my choice), other chopped fruit or raisons. Preheat oven to 400, use muffin cups in your muffin tin or grease the tin, blend dry ingredients first and then add the rest, blend well, spoon ingredients into cups and let sit 10 minutes, bake about 15 minutes or until top starts to turn brown. Makes about 12 muffins. refridgerate or freeze those muffins that you don't plan to eat within three days. Three muffins a day are the reccommendation of the author in regards to optimal cholesterol reduction, but you might want to start out with less than that. They are delicious, but can cause some methane for some people.

I need to start making these again. This helped lower my cholesterol from 220 to 185. I also worked out and stayed away from fried foods.

I would hate to know what my cholesterol count is now. ..

Thanks for the recipe. My wife is going to give them a try since I am trying to lower my cholesterol.

Not a problem Dave - hope you enjoy ! I was surprised to see a post way down here in recipies. This section is sorta like being Elizabeth Taylors 5th husband - you know what to do but not how to make it interesting. Happy muffins ! Chris
