View Full Version : Fat Free Bread Pudding--yummy!

Preheat oven to 400 degrees
Pam
8-10 baguette slices (or equivalent)
2 tablespoons fat free butter(I use I Can't Believe It's Not Butter Fat Free)
1 1/2 cups Eggbeaters
2 cups skim milk
1/2 cup splenda (or sugar)
1 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
Butter both sides of bread and place in oven-safe casserole sprayed with Pam. Combine remaining ingredients. Pour over bread. Add raisins or bananas if desired. Place in oven in pan of boiling water. Bake at 400 for about 1 1/2 hours.

Is this really good? I am a major fan of bread pudding but, due to the fat content, tend to have it only once or twice a year at a restaurant that is locally famous for it.
Do you use a sauce for it or suffer without one?

Honestly, it's good! Gosh, I've never used sauce on bread pudding. What kind of sauce? I should've mentioned putting it in a pan of boiling water while baking it--I did that. I think it just keeps the pieces of bread that float to the top from getting rock-hard.

I always have bread pudding with vanilla or rum sauce. Here is the recipe. I have never tried making it with FF half & half & FF butter, but I might try along with your recipe.
Vanilla Sauce:
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup whipping cream
1/2 cup butter
1 tsp. vanilla
For vanilla sauce, in small saucepan, combine 1/2 cup sugar, brown sugar, whipping cream and 1/2 cup butter. Cook over medium heat, stirring occasionally, until mixture thickens and comes to a full boil, 5 to 8 minutes. Stir in 1 tsp. vanilla. Serve sauce over warm pudding. Store in refrigerator
For rum sauce just replace vanilla with rum.

My wife LOVES good bread pudding. This will work very good on our LA Weightloss diet. I'm going to surprise her and make someday soon. She'll flip! Thanks. Wise

Uncovered and in a dish of boiling water. (I use a big pyrex casserole to set the bowl/smaller casserole of pudding in and pour already boiling water from my teapot into the casserole after it's all in the oven) The water is not absolutely necessary, but the top will be crispier without it.

I love bread pudding. Seems like every town has one restaurant famous for its bread pudding. If I am going to eat bread pudding, I am going to have rum or whiskey sauce on it!
