Beef and Peppers

1 pkg. flat iron cut chuck, chuck tenders, chicken steak or similar chuck cuts
4C Salt-Free Seasoned Bread Crumbs
vegetable oil
1 large green pepper sliced into one quarter inch slices
1 large red pepper sliced into one quarter inch slices
garlic powder
basil flakes
oregano flakes

If you use salt, then add to taste

Here's what I do with these not so tender cuts of beef. I really trim them, and they are super tender. I cut off all of the silvery-sinewy tissue on the outside edges. I look for any other similar tissue in the middle of the pieces, there's usually a rather tough center piece which I cut out, and if there are other larger pieces of this tissue, I trim that out as well.

Then I slice them with the grain into thirds, then slice them against the grain into about one-quarter inch slices. Cover each slice with bread crumbs and sort of push them in so they stay. Then saute beef slices in oil until browned on both sides. Remove from pan and keep warm. Add pepper slices to remaining oil in pan and saute them until slightly browned, adding garlic powder, basil and oregano to your taste. Cover the pan and let them soften some.

Serves two. Good with garlic bread too.
