Especially for those who live alone and don't especially like to cook.

Here's one of my staples:

Barry's Sophisticated Roast Chicken and Potatoes

Buy a chicken at the grocery store, take the guts out and wash it off, put it on a roasting pan that elevates it a bit so that it's not sitting in grease as it cooks. Put a few potatoes on the roasting pan after poking them a couple of times with a fork. Put it in a 350-degree oven for an hour or so, and be sure to stick a meat thermometer in it 'cause I'm lousy at otherwise figuring out when somethings's done.

As you're eating the chicken, feed the skin to the dog while wondering why she still begs at the table after having been scolded for it so many times.

No fair filling the baked potato up with great gobs of butter and real sour cream.

Save the other potatoes for later, to be sliced and fried with sliced onions in vegetable oil along with some fried onions, to served with chicken livers fried in vegetable oil at another meal. I generally use Canola oil.

The leftover skinless chicken generally ends up in sandwiches.

Here's a low fat salmon recipe that is very quick and easy. Just double for 2 people or if you want leftovers for a salad.

1 6oz salmon filet, skinned (look for a thick one - 3/4-1 inch)
1 clove garlic minced (can use jarred minced garlic but not dried)
3/4 cup low salt chicken stock
1 tablespoon olive oil
1/2 teaspoon fresh or dried dill (more to taste)
Fresh lemon juice

Preheat oven to 375. Lightly sear salmon on all sides in olive oil over medium heat (watch out for splattering). Remove from pan, add garlic and saute for 30 seconds.

Put 1/4 cup of chicken stock in small baking dish. Place salmon in dish, pour remaining stock over salmon. Top with sauteed garlic and dill. Bake for 10 minutes until fish flakes easily - do not overbake.

Remove to plate, squeeze lemon juice over salmon, top with cooking liquid.

Wonderful served with whole green beans or asparagus. Also, great served chilled on romaine lettuce. Can use cooking liquid whisked with lemon juice and olive oil as salad dressing.

There are actually lots of recipes on this particular forum, however they are older posts. So if you want to see them just click on the name of the forum and it will bring up some display options. Where it says from when (I think) there's a drop down and click on "beginning". You should see them all.

Thanks for the recipe, geebee! I love Salmon. I'll have to try it. FYI, here's my salmon recipe:

Follow chicken recipe, but substitute salmon and delete potatoes. Don't fuss with a meat thermometer, but be careful not to over-cook it.

And thanks, Nancy - took me a minute to figure it out, but, yep, there's a bunch. Thanks!!!

I really need to find a heart-healthy recipe for bacon-and-eggs served with potatoes fried in bacon grease and buttered toast.

You are welcome. As far as the bacon & egg dish healthy substitute goes, not in this lifetime. However, once a year, say on your birthday or New Year's day or the like - go for it. It's unlikely to clog your arteries after one serving.

However - I apologize if I am wrong. I just refuse to live the remainder of my life totally denying myself things I love. If I did, what's the point of going through all this?

As long as there is bacon, I'll know that there is a God.

This is one of my favorites
1 15 oz. can each of red kidney beans, tomato sauce, stewed tomatoes,
16 oz. of water
1lb of ground turkey
1tsp each of cumin, garlic powder, andchili powder
brown turkey,add seasoning, and simmer 5 min
add tomato products , water and kidney beans
simmer over very low heat for 15-20 min. Serve
Makes a great Taco salad if allowed to simmer and reduce for about 30 min.
Low sodium tomato products can be used to decrease sodium content if needed.
Chili powder can also be increased for a spicer version.

Can I come over to your house when you fix this??...I love fried potatoes and chicken livers...but hubby is very picky and he won't even touch onions...and forget chicken livers....

This is one of my favorites, so I may have posted it before.

A couple pounds of ground round, mixed with diced onions, green peppers, and green olives. Form into patties, and wrap with strips of bacon. Fry until the bacon is moderately crisp. Not to be eaten often.

Thanks for the recipes, folks.

I'd initially gone on from there to post a recipe for squab, but decided to put it in a separate thread since it hardly falls within the realm of "quick and easy" unless a local grocery store carries squab, which I've never seen.
